When the player completes the Quest, is it possible to rank completed tasks last, or is there an option to separate completed and uncompleted tasks?

Tasks are listed as defined in your used quest layout or quest HUD if you're using that for a more complex display.

Quests can currently only be sorted by the already available sorting options (e.g. name, ID, etc.), but you can have separate quest menus for different quest states, e.g. have all finished quests in a separate menu screen.
I'll look into adding additional sorting options based on quest state.
