I want to save the local variables at the Makinom and I found there is the box adding exclude Variables
but I don't know how to use it.

The variables in the save game settings are for the global and object variables coming from Makinom, not your custom script's variables/fields.

For saving custom data, you can use custom save data and custom component save data.
